Pumpkin Spice Rooibos Shortbread Cookies | Cozy Fall Recipes

These cookies are buttery, with just the right amount of spice to warm you up in the fall season.

Ingredients:

  • 2 cups salted butter (room temp.)
  • 1½ cups granulated sugar
  • 5 tsp Pumpkin Spice Rooibos (powdered in spice grinder)
  • 1 tsp Pumpkin Spice Powder
  • 4½ cups all purpose flour
  • 1 tsp salt
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350F.
  2. Cream butter, sugar, Pumpkin Spice Rooibos powder, pumpkin spice powder, vanilla extract and salt together in a mixing bowl.
  3. Slowly add flour, and work into dough. ( add a splash of milk if needed, but dough should be flaky.
  4. Roll dough into 2 inch balls with hands and place on baking sheet.
  5. Press down with fork to make a criss cross pattern.
  6. Bake in oven for 22-24 minutes, until golden.
